Head Cook

 

I am currently recruiting for an experienced head cook to join my well-established client within an elderly care home based in the Totland Bay, Isle of Wight area. You will be responsible for overseeing control of the kitchen, and producing varied, appealing, and nutritious meals for the residents, visitors and staff.

The successful candidate will have a strong desire to succeed, an in-depth knowledge within the culinary industry, and a history of kitchen management.

 

Overview

  • Salary – £23,660
  • Hours of Work – Full Time Permanent Position.
  • Shifts – 35 Hours Per Week / 5 Days Per Week / 8AM to 2PM (Tuesday to Saturday)
  • Area – Totland Bay, Isle of Wight

 

Responsibilities of Head Cook

  • Implement and supervise all aspects of kitchen control, such as menus, hygiene, health and safety, staff, cleaning, and waste control.
  • Prepare menus for the nursing home, ensuring that all residents’ special diets are catered to.
  • Provide residents with 3 full meals each day and ensure that hot and cold beverages and snacks always available throughout the day.
  • Consult with residents at regular intervals to ensure that their needs and choices are being met.
  • Work within an agreed budget on staff and consumable costs and cooperate within any actions necessary to keep within the set budgets.
  • Place orders of supplies and catering consumables and ensure that high levels of stock are continuously maintained.
  • Supervise, induct, and train colleagues within the catering team.
  • Hold monthly meetings with the kitchen staff and take stock takes at the end of each month.
  • Implement and maintain an agreed deep cleaning schedule for the kitchen.
  • Complete monthly audits and checks on the kitchen.
  • Complete ‘Safer Food Better Business’ daily/4-weekly checks
  • Complete regular operational checks of all equipment, reporting any defects to the home manager.

 

Skills Required of Head Cook

  • Have a secure understanding of HACCP and ensure that all catering staff adhere to HACCP and all documentation is completed and signed by the appropriate member of staff.
  • A strong understanding of health and safety will be vital as you will be required to undertake H&S checks on a regular basis.
  • You will be required to hold and maintain an in-date Level 2 Certificate in Food Hygiene, and supply this at time of appointment.
  • Complete ‘Safer Food Better Business’ daily/4-weekly checks
  • A strong knowledge of food storage best practices, as you will be responsible for ensuring that all food is kept in the appropriate storage means as well as with correct labelling / date codes.
  • Strong interpersonal skills will be beneficial as you will need to maintain positive working relationships with members of your team as well as suppliers.
  • Knowledge of the audit process within the catering industry as you will be responsible for completing frequent audits and checks within the kitchen environment.
